Forget Beiber...This Was A NKOTB Full-On Experience!

I really enjoyed making the pork chops last week, and it made me feel so good that a couple of you actually made them too! This week I decided to try a meatloaf. I found this recipe on a blog...and I have tried and tried to find it again so I can give credit. If this is your recipe please let me know so I can let others know where I found it!

I gathered my supplies.

Put the layer of brown sugar and then the layer of ketchup...my family eats ALOT of ketchup! They put it on almost anything...makes me feel in touch with my inner redneck.

Then it said to put the remaining ingredients in a bowl and mix together. My BFF Ruth said the best way to mix these is with your hands! What?! Here's the proof I did it with my hands! Not only did my head spin, but my heart was thump thump thumping...this was WAY worse than lifting the chops into the crock pot. By the time it was mixed and I washed up I had to sit down...so this is what it would have been like if my parents would have let me go to that New Kids on the Block Concert...

I formed it into a loaf...and had to go wash up again...

After one hour of baking it was yummy! I got so excited I forgot to take a pic of my plate again! Here is the piece I put up for Dr. Hubby. Unfortunately Randy Jackson wasn't the only one calling someone a "Dawg" last night. Dr. Hubby pretended to be too full to try it. He slept on the couch.
I served the meatloaf with mashed potatoes and corn. Manga Dork and the littles loved it! It goes into the recipe basket with the chops! My MIL even called and said it was the best meatloaf she has ever eaten {of course she may have already taken her Ambien...lol}.
Meatloaf
1/2 c. brown sugar, packed
1/2 c. ketchup
1.5 lbs. lean ground beef
3/4 c. milk
2 eggs
1 1/2 tsp. salt
1/4 tsp. ground black pepper
1 small onion, chopped
1/4 tsp. ground ginger
3/4 c. saltine crumbs, finely crushed
1. Preheat oven to 350 degrees.
2. Lightly grease 5x9 loaf pan
3. Press brown sugar in the bottom of the prepared loaf pan and spread ketchup over the sugar
4. In mixing bowl, mix thoroughly all remaining ingredients and shape into loaf
5. Place on top of ketchup
6. Bake in preheated oven for one hour or until juices are clear.

Yum! This is the most requested meal at my house. We call it brown sugar meatloaf. I put brown sugar on top too. Glad the kiddos liked it.

I love meatloaf. I have a recipe that has brown sugar, catsup, mustard and a little worchestershire sauce.
I have never thought of putting the mixture in the bottom of the pan. I shall change my ways!!! Thanks for the great idea!

All of our family loves meat loaf! I have never seen this recipe before, but it sounds like it would be delicious! The recipe my husband grew up with is similar, only the sugar/ketchup sauce goes on top, but it's essentially the same idea! (Add sugar to anything, and it will taste better!) And I understand the whole "mix it with your hands" thing~ that is just NOT fun!

i hate touching meat too - i use rubber gloves LOL (or you can use ziploc bags on your hands) :D

My family loves meatloaf. I'll have to give this one a try. My secret is to put string cheese inside the middle of the loaf before it bakes because we like things cheesy around here. And leftovers make yummy meatloaf sandwiches the next day.

The ketchup/brown sugar on the bottom sounds great.....I am sooo gonna try that the next time. I have a question for you....I think I read in one of your earlier blogs that you don't cook, and now you've fessed up to your raw meat phobia...so, I really gotta know.....what do ya'll eat??? Love your blog, by the way!

We love meatloaf at our house, and my recipe is similar. Actually, I kind of fly by the seat of my pants and dump in what we have and I think might sound good. A1 sauce, monterey grill spice, spicy ketchup..... one of the rare things I will make on occasion
